"Fresh In The Garden"

At Soneva Fushi there are now three gardens the first and oldest being the Vegetable garden that is over 15 years old and around 1700m2 in size. The second oldest is Fresh In The Garden which was designed using Permaculture principles over 5 years ago which is  3700m2 including the food forest.

The center piece is the amazing restaurant in the middle of the garden that draws from the produce harvested daily from the surrounding garden. The menu is designed daily based on what is available and is usually booked out in advance due to the unique setting, architecture and menu.

 
Restaurant 

The garden is accessible from the restaurant by an overhead swing bridge and board walk. An observatory for star gazing is also accessed by a board walk above the banana, papaya, Nonie, mango, 5 star and custard apple tropical fruit forest below. From the composting toilet there is a view that rates in my top 5 sustainable toilet experiences in the world and Glastonbury Festival is not one of them!

When the soil was tested in November a pH range of 8-10 was recorded the same as the vegetable garden. The same tropical soil growing strategies have been implemented as in the Vegetable Garden and as demonstrated in the design and build of the outdoor classroom.


 
The team at Fresh in the Garden HANIF, HASEEN, PRIYANTHA and NIHAL have been redesigning beds, composting, mulching, repairing and building rabbit proof fences.

Banana circles are being designed amongst the existing plantation and then there is the growing of over 70 different herbs, fruits and vegetables as listed below. We grow about 35% of our needs currently and look to increase varities and yield as soil health improves. (Figures:  Fresh in the Garden & Vegetable garden)

Retrofitted bed 3 months old and still producing 



Evidence of the hard work can be easily seen in the health displayed in the vegetables being produced from retrofitted beds compared to those not.



As seen in the snake bean bed compared to the first bed retrofitted in the vegetable garden that has now been producing 2-3 kg ever 4 days for over 3 months and with no sign of stopping.


Pumpkin trellis

A sign that the soil building strategies are producing healthy soil and therefore healthy plants and most importantly abundance of produce acheived sustainably.
